Spinach chapati


Description:
Spinach is low in fat, cholesterol but high in Vitamins, protein, fibre etc

Ingredients:
1. Spinach - 2 or 3 bunches
2. Wheat flour/atta - 2 cups
3. Salt to taste

Procedure:
Most of us knows how to make a chapati and the only additional ingredient I used in this recipe is Spinach. Clean and wash the spinach. Take a stockpot and fill it half with water. Add some salt and allow to boil. Next add the spinach and cook till the spinach becomes soft. Don`t overcook the spinach as overcooking will lead  to loss of all its nutrients. Check whether the leaves have started to get soft, if so then remove from the pot and transfer to a sieve. Let the spinach cool down. Take a blender and add the spinach. Make a paste, add the remaining water in the stockpot to loosen the paste.









Next is to make the dough. Take the wheat flour in a bowl and add salt. Knead with the spinach paste. The dough should be soft. Start separating the dough into different portions. Make a ball out of each portions and gently flatten with your palm. Take a board and a rolling pin. Spread little wheat flour on the board/dunk both sides of the dough in the flour and start rolling to make chapatis. Heat a pan/griddle on medium flame and gently place the chapati on it. Flip on both sides and slowly small bubbles with start to form. Apply some oil and once the chapati puffs up remove it from the griddle.







Repeat the small for remaining portions. Serve with curry of your choice.
