Quail Egg stew


Description:
Numerous health benefits this tiny thing posses. It seems 1 quail egg contains twice the nutrients 1 chicken egg have.

Ingredients
1. Quail eggs - 10
2. Onion - 1
3. Tomato(optional)
4. Potatoes - 3 (medium)
5. Coconut milk - 1/2cup
6. Green chillies - 3 to 4
7. Bay leaves
8. Cinnamon stick - 1
9. Cumin seeds
10. Mustard seeds
11. Curry leaves
12. Ginger
13. Garlic
14. Turmeric powder - 1/2tspn
15. Coriander powder - 2tspn
16. Oil
17. Salt to taste

Procedure:
Boil and set aside the quail eggs. Quail egg will cook very fast, it just requires 4-5 minutes max. Slice the onions and chop ginger, garlic and the green chillies. Cut the potatoes too into small cubes size. take a skillet and pour some oil. Splutter mustard, cumin seeds and curry leaves. Add ginger, garlic, green chillies, bay leaves, cinnamon stick and saute for few seconds. Next add the onions and saute till they starts to turn golden color. Next goes in the poatatoes and cook till the potatoes are done. Add the turmeric powder and coriander powder once the potatoes are done.  Add salt.





 Mix well and saute for few seconds and pour in the coconut milk with some water. Allow to boil and finally add the quail eggs. Before adding the egg to the curry make some slits on the eggs. If you want add little garam masala atlast.


Garnish with coriander leaves and serve with appam/rice/roti etc.
