Egg biriyani(pressure cooker)


Description:
Biriyani is rice flavoured with different spices. We can add vegetables/meats in the biriyani. This recipe is a simple one made in cooker.

Ingredients:
1. Basmati rice -  2 cups
2. Eggs- 3
3. Onion - 1 big
4. Cinnamon stick
5. Bay leaf
6. Black pepper corns
7. Star anise - 2
8. Ginger/garlic paste or crushed
9. Turmeric powder- 1/2tspn
10. Chilli powder - 1tspn
11. Coriander powder - 1tspn
12.Gram flour(besan)- 3 tspn
13. Oil/ghee
14. Fennel seeds(saunf)
15. Curd - 1/2 or 1 cup
16. Coriander leaves
17. Green chillies - 3
18. Garam masala - 1/2tspn
19. Salt to taste

Procedure:
You can soak the basmati rice for atleast 30 minutes before cooking as this will reduce cooking time. For this recipe I didn`t soak the rice instead used it directly. Boil the eggs. Take a bowl add the besan, little chilli powder, salt, turmeric powder and water to make a marinade paste. Dip the egg in the marinade and coat them properly. Leave it aside for sometime and then shallow fry them.




 Slice the onions. Take the pressure cooker and pour some oil/ghee.  Add fennel seeds, pepper corns, bay leaves, cinnamon stick, green chillies and star anise. Saute them and add the onions. Cook till the onions starts to change colour. Add remaining turmeric powder, chilli powder and coriander powder. Stir well  and cook for few seconds.





Next add the ginger/garlic paste, curd, garam masala and coriander leaves. Check for salt too.  Stir and add the basmati rice. I use the ratio of 1:2(1cup rice:2cups of water). Since I`m using 2 cups of rice so I poured 4 cups of water. Allow to boil and close the pressure cooker lid. Cook for 2 whistles(sometimes 3 whistles are required).




 Open the lid and check whether the rice is cooked or not. Add the fried eggs too into the biriyani. Mix once  again slowly and transfer to a serving bowl. Serve with raita etc. Enjoy



Note:
-You can add mint leaves.
 -Cashew nuts and raisins can be added too. Since my family is not a fan of cashew nuts and raisins so thats why I didn`t add in the recipe.
- Instead of cooking in pressure cooker you can cook it in a non stick vessel(preferable) for 20 minutes.
