Chicken Jhol(Inspired from Bengal Cuisine)


Description:
This dish is inspired from the Bengali cuisine Robibar-er murgi-r jhol. This dish should be cooked in mustard oil to acquire the actual taste but I didn`t had mustard oil at home so I used normal cooking oil.

Ingredients:
1. Chicken - 500gms(leg pieces preferred)
2. Onions - 2(medium)
3. Tomatoes - 1(big)
4. Ginger
5. Garlic
6. Green chillies - 3 to 4
7. Chilli powder - 2tspn
8. Coriander powder - 1tspn
9. Cumin seeds - 1tspn
10. Turmeric powder - 1/2tspn
11. Bayleaf - 3
12. Green cardamom - 2 to 3(In this recipe  used black cardamom because I ran out off green cardamom)
13. Cinnamon stick - 1
14. Cloves - 3
15. Black pepper corns16. Oil(Mustard oil is preferred)
16. Potatoes - 2(medium)
17. Salt to taste



Procedure:
Clean and wash the chicken. Soak the cloves, cinnamon stick, cardamom and pepper corns in a bowl.

 Take 1 onion and chop it into small pieces. Transfer this onion into a blender also  add ginger and garlic. Grind to make a paste and set it aside.

 Chop the other onion, tomatoes, green chillies. Take the cooker and pour oil. Add cumin seeds and allow to splutter, then add the bayleaves and green chillies. Next add the remaining onions, salt and saute for few minutes. Then add the chicken and cook for few seconds with no lids. Add the chilli powder, turmeric powder and coriander powder into the cooker and mix properly. Finally add the onion paste and tomatoes. Cook till the raw smell goes off. Add some more water if required, moreover while cooking even the chicken will ooze out extra water. Close the cooker and cook it for 3-4 whistles.







 Meanwhile peel the potatoes and fry them in a skillet/wok till they starts to get golden brown colour on the sides. Leave aside both the chicken and fried potatoes till they cool down. Drain out the soaked spices. With the help of a motor and pestle crush this spices to form the masala.



Transfer the chicken curry to the wok that contains fried potatoes . Adjust the consistency of the gravy as per your wish. Finally add the freshly made masala into the Chicken jhol. Check for salt. Garnish with some coriander leaves before serving. Enjoy!!
