Vegetable Kurma


Description:
Vegetable kurma is a common dish found in any parties or get together. We can basically use any kinds of vegetables for this dish. Inspired from a cookery show.

Ingredients:
1. Carrots - 1(big)
2. Green peas
3. Potato - 2(big)
4. Onions - 2(medium)
5. Tomatoes - 2(medium)
6. Ginger
7. Garlic
8. Green chillies - 2
9. Curry leaves
10. Fresh grated coconut/dry granted coconut- 1/2cup
11. Cashew nuts
12. Chilli powder - 1tspn
13. Coriander powder - 1tspn
14. Garam masal -1/2tspn
15. Curd - 4 to 5 tspn(beat before use)
16. Oil
17. Salt to taste



Procedure:
Clean and chop all the veggies in cubes or length wise. Take water in a deep bottom vessel and add some salt. Allow to boil and drop in the chopped veggies . Partially cook them and keep aside. Boil some more water and drop the cashew nuts. Cook for 5-10 minutes and you will see the nuts have become soft and easy to grind. Take a blender and add the cashew nuts and grated coconut. Add some water too and grind to make a paste. Crush the ginger, garlic and green chillies.





Chop the onions and tomatoes. Take a pressure cooker and pour some oil. Add the onions and cook for few minutes. Then the tomatoes and the crushed ingredients. Also goes in the chilli powder, coriander powder or garam masala. Stir well and add very little water to it. Close the cooker and let 4 to 5 whistle. The gravy will be cooked nicely.




Take a wok/skillet. Pour very little oil and add some curry leaves. Then add the cashew paste and cook for sometime. Give stirs in between and slowly you can see the water in the paste will evaporate and the paste will start to separate. Next goes in the cooked gravy. Add salt and some more garam masala if required. Add the beaten curd. Mix and let the gravy boil. Finally goes in the partially cooked veggies. Cover the lid and cook till the veggies are done.















One important thing to keep in mind while making kurma is that don`t over cook the veggies. They shouldn`t break off or get mashed while mixing with the gravy. Adjust the consistency of the gravy. I made the gravy little thick as I served it with roti. Turn off the stove and serve hot with food of your choice. Enjoy.
