Methi Egg masala(Fenugreek leaves with egg)


Description:
Delicious another egg recipe.

Ingredients:
1. Egg - 6
2. Onion - 1(big)
3. Tomatoes - 2 to 3(small)
4. Fenugreek/methi leaves (I used dry methi leaves)
5. Turmeric powder - 1/2tspn
6. Chilli powder -1.5tspn
7. Coriander powder - 1.5tspn
8. Garam masala - 1tspn(I ran out of garam masala powder, so used the below whole garam masala)
9. Cinnamon stick
10. Star anise
11. Black pepper corns
12. Ginger
13. Garlic
14. Coriander leaves
15. Mustard
16. Oil
17. Salt to taste


Procedure:
Boil the egg and keep aside. Chop the onions, tomatoes, ginger and garlic into small pieces. Dry roast or you can even directly drop in the turmeric powder, chilli powder and coriander powder while cooking. Incase you are dry roasting the ingredients then allow it to cool down after roasting. Transfer to a blender and pour some water. Make a paste . Then drop in the tomatoes too and grind till the paste becomes smooth.




 I ran out of garam masala powder so thats why I`m using the whole spices while spluttering mustard. Take a wok and pour some oil. Add  mustard and allow to splutter. Add the black pepper corns, ginger, garlic, cinnamon stick and star anise. Saute for sometime and add the onions. Saute till they turn golden color. Add salt. Pour the paste into the wok and allow the gravy to boil. If you want you can add more water to make a thin gravy. Next add the methi leaves and the boiled egg. Allow the curry to cook for sometime. Adjust the consistency of the gravy. Check salt and add more if required.









Finally garnish with some coriander leaves if you wish. Serve hot with rice, chapati etc. Enjoy
