Spicy Kerala Fish curry


Description:
Fish curry is very famous in Kerala. Its usually served with steamed rice, steamed cassava, roti etc.

Ingredients:
1. Fish - 800-900gms(you can use any fish)
2. Onion - 1(medium)
3. Tomato- 1(medium)[optional, since we use Gamboge so its not a must to add tomatoes. You can add if you want though]
4. Ginger
5. Garlic
6. Green chillies - 3 to 4
7. Gambogee - 3 to 5 pieces(clean and washed)
8. Curry leaves
9. Turmeric powder - 1/2tspn
10. Chilli powder - 2tspn
11. Coriander powder - 11/2 to 2 tspn
12. Fenugreek seeds - 1/2tspn
13. Mustard
14. Oil
15. Salt to taste



Procedure:
 If you could clean the fish and marinate with little salt the previous night and leave it in fridge overnight it will be very good. Though its not mandatory. Coming back to the recipe, clean and wash the fish. Slice the onions and tomatoes. Chop the ginger, garlic and green chillies. Take a skillet/chetti(clay pot) and pour some oil. Add the ginger, garlic, fenugreek seeds, green chillies and little curry leaves and saute for few seconds. Next add the onions and saute till they starts to turn golden brown. Dry roast the chilli powder, turmeric powder and coriander powder. Transfer to a blender and make a paste adding some water. Pour this paste into the onions.




Add some more water if the gravy appears to be very thick. Allow the gravy to boil and then add the Gamboge. Then the tomatoes if you are using it. Add salt and mix properly. Check the taste and if some more salt or gambogee is required then add it now. Once the fish is dropped in the gravy then you should not mix the curry otherwise the fish may break. So after checking the taste drop in the fish and give a good twirl holding the edges of the skillet/chetti. The fish pieces must submerge/partially submerge in the gravy. Put on the lid and let it cook. Occasionally remove the lid and give a twirl. Let the curry cook for 10 - 15minutes or more based on the thickness of the fish used.








When the fish is cooked remove the lid and check for the consistency of the gravy. Set it aside and make the seasoning. Pour some oil in a skillet and splutter mustard and curry leaves. Pour it over the fish curry.

Well, spicy  fish curry is ready to be served with your food of choice. Enjoy.
