Brinjal masala dry


Description:
Brinjal/egg plant/aubergine known by different names is fat, carbohydrates etc.

Ingredients:
1. Egg plants - 4 to 5
2.Onion - 1(medium)
3. Tomatoes - 2(medium)
4. turmeric powder - 1/2tspn
5. Chilli powder - 1tspn
6. Coriander powder -1 tspn
7. Garam masala - 1/2tspn
8. Oil
9. Coriander leaves
10. Cumin seeds
11. Salt to taste

Procedure:
This is a very simple recipe and can be prepared in minutes. Chop the onions, tomatoes and egg plant. Take a skillet and pour some oil. Add  cumin seeds and splutter. Add onions and saute till they starts to change color. Next add tomatoes and let it become mushy. Add the turmeric powder, chilli powder, coriander powder and garam masala. Mix and cook for sometime.




Next goes in the egg plant. Mix well till the egg plant pieces are coated with the masala. Add salt and cook with lids on. Give stirs in between. Egg plant may ooze out excess water. In that case remove the lid and cook. Cook till the egg plant is done and no moist is left. Throw in the coriander leaves and turn off the stove.




Allow the dish to cool down for some seconds and then transfer to a platter. Serve with rice, roti, naan etc.
