I had added egg in this recipe but it can be avoided by pure vegetarians.
Ingredients:
1. Cooked basmati rice - 2cups
2. Spinach - 1 or 2 bunch
3. Egg - 2(Vegetarians skip egg)
4. Onion - 1(small)
5. Chilli powder - 1/2tspn(optional)
6. Garam masala - 1tspn
7. Pepper powder - 1tspn
8. Ginger
9. Garlic
10. Oil
11. Salt to taste
Procedure:
Clean and wash the spinach repeatedly in running water. Shred the spinach. Chop the onion and crush ginger, garlic. Take a wok and pour oil. Add the crushed ginger/garlic and then the onions. Saute till onions turn brown. Next add the garam masala, salt and pepper powder. Mix properly and add the spinach. The spinach will ooze out water. Cook till the spinach is done.
Push the spinach aside and break the egg into the same wok. Add some more pepper powder and scramble the egg. When the egg is done mix it together with the spinach. Check for salt and add if required. Finally add the cooked basmati rice. Mix everything properly and cook for few more minutes.
Turn off the stove and serve with side dish of your choice. Enjoy.
