Description:
This fried rice is made with very minimal spices. Prawns when cooked gives out amazing flavour and I love to retain that flavour in my dish, so I used very minimal spices.
Ingredients:
1. Cooked basmati rice - 2 cups
2. Crab meat - 150gms
3. Prawns - 10 - 15
4. Tilapia fish fillet - 1(you can use any fleshy fish)
5. Onion - 1(small)
6. Ginger
7. Garlic
8. Whole Green chillies -2 to 3
9. Pepper powder - 2tspn
10. Chilli powder - 1/2tspn
11. Garlic leaves (instead you can use spring onion but I prefer garlic leaves because it adds a good flavour)
12. Oil
13. Salt to taste

Procedure:
Clean and devein the prawns. I used crab meat that is already separated from its shell. Clean the fish and cut into pieces you wish. Take a bowl and add chilli powder, 1 tspn of pepper powder, some crushed ginger/garlic and salt. Add few drops of water to make a paste. Transfer all the seafood into the bowl and mix well. Let it marinate for sometime.
Crush some more ginger and garlic for later use. Chop the onions and garlic leaves. Take a skillet and pour some oil. Shallow fry the prawns and the fish. Don`t throw the remaining oil left after frying the prawns and fish.
Take a wok and pour very little oil, infact few drops will be enough. Add the onions and saute it. Then add whole green chillies, crushed ginger and garlic. Cook for few seconds then add the crab meat. Crab meat will cook very fast. Pour the leftover fried oil into the wok. Mix well and drop in the garlic leaves. Add the remaining pepper powder and salt. Close the lid and cook till the garlic leaves and done. Next add the fried prawns and fish. Finally add the cooked rice.
Mix everything well and allow to cook for few more minutes on medium flame. Check for salt and add more if required. Transfer to a platter and enjoy.
