Description:
Mutton roast or most commonly known by the name Mutton ulathiyathu is a very famous dish of Kerala.
Ingredients:
1. Mutton - 900 gms
2. Onion - 2(medium)
3. Ginger
4. Garlic
5. Green chillies - 1 to 2
6. Curry leaves
7. Turmeric powder- 1/2tspn
8. Chilli powder - 2 tspn
9. Black pepper corns
10. Garam masala - 1/2tspn
11. Fennel seeds - 2tspn
12. Oil
13. Salt to taste
Marination Ingredients:
1. Curd(optional) - 3tspn
2. Pepper powder - 1tspn
3. Turmeric powder - 1 pinch
4. Chilli powder - 1/2tspn
5. Salt
Procedure:
Clean and wash the mutton. Marinate the mutton overnight or atleast for an hour. Take a bowl and add all the above marination ingredients. Mix well and drop the mutton pieces into it. You can add curd or even skip it for marianation process. Take a motar and pestle or use a blender to crush the green chillies, ginger and garlic. Before cooking the mutton add this crushed ingredients to the marinated mutton. In the same motar and pestle add the fennel seeds with some water and try to make a paste. Its ok if the paste is not smooth.
Take a cooker and transfer the mutton. Add little turmeric powder, fennel seed paste, garam masala and 1 tspn of chilli powder. Pour some water and cook the mutton for 4-5 whistles or more. Cooking time depends on the quality of mutton you are using. Once the mutton is done, open the lid and check if excess water is there. Cook for some more time with no lids. and let the gravy become thick but not dry. Set aside.
Slice the onions very thin. Take a skillet and pour some oil. Add curry leaves and black pepper corns. Then add the onions and saute till they turn golden color. Next add the remaining turmeric powder, chilli powder and some garam masala. Mix and saute for sometime. Pour the mutton gravy into it and add salt. Mix well and cook till the masala dries up and coat on the mutton pieces.
If you want you can make the dish completely dry or you can leave some moist in the gravy. Depending on what you are planning to serve with the mutton. Mutton roast is ready. Enjoy.
