Description:
The main ingredient used in this recipe is brinjal, though you can try adding different veggies too like capsicum etc.
Ingredient:
1. Brinjal - 4 long(I used the normal purple long brinjal but prefer long green brinjal)
2. Capsicum - 2
3. Shallots- 5 to 6(can substitute with onion too)
4. Ginger
5. Curry leaves
6. Mustard leaves
7. Urad dal- 1.5 tspn
8. Chana dal - 1.5 tspn
9. Whole coriander - 1 tspn
10. Cumin seeds - 1/2tspn
11. Dry red chilli - 2
12. Grated Coconut - 2 tspn(dried or fresh)
13. Peanuts - 2 tspn
14. Cooked basmati rice - 2cups
15. Oil/ghee
16. Salt to taste
Procedure:
Cook the basmati rice with 1 tspn of ghee. Take a pan and pour little oil. Add the urad dal, chana dal, cumin seeds, peanuts and whole coriander into it. Roast them and as soon as they starts to change color immediately add the coconut and the whole red chillies. Stir for few more seconds till everything become slightly golden but don`t burnt them. Set aside to cool down. Chop the brinjal and the capsicum. Crush the ginger. Transfer the roasted items into a blender and grind to make fine powder.
Take another wok/frying pan and pour some more oil. Add mustard and allow to splutter. Next add the curry leaves and then goes in the shallots. Saute till golden brown and then add the crushed ginger. Next add the brinjal and the capsicum. Add salt, stir well and cover the lid. Allow to cook till the veggies are done. Next add the powdered masala. Stir well and again cook for few minutes. Finally goes in the rice and add some more salt if required. Mix well and leave it on low flame for 1-2 minutes.
Turn off the stove and serve it on a plate with side dish of your choice. Enjoy.
