Description:

Chicken curry is a favourite of all. It can be served with Rice/Chapati/Appams etc. There are  so many recipes to cook chicken and the one I`m going to share is a simple recipe. I will upload more soon.
Ingredients:

1.Chicken legs - 2 pkts
2.Onion- 1 big
3.Green Chili - 1
5.Capsicum - 1(optional)
6.Ginger
7.Garlic
8.Tomato - 1 big
9.Cilantro
10.Coriander powder - 1 tbpn
11.Turmeric powder -  1/2 tbspn
12. Chili powder - 1 tbspn
13.Garam masala - 1/2 teaspoon
14.Mustartd for seasoning
15. Fennel seeds
16. Curry leaves, bay leaf - 2 or 3
1.Salt to taste

Procedure:

Clean and wash  the Chicken  and keep aside. Chop the onions, ginger, garlic,Capsicum,Tomato and greenchili. Take a Skillet/griddle and pour some oil into it .  Splutter mustard and add the curry leaves and bay leaf. Then add the chopped Ginger,Garlic, green chilli and mix it for 2 secs, after that add the Onions and saute until the onions become golden brown.  Once onion is done add the tomatoes. Let the tomatoes cook and in the meanwhile dry roast slightly the chilli powder, coriander powder, turmeric powder and fennel seeds. Cool it and grind to make a paste. Note - be careful not to burnt the powders. Once the tomatoes starts getting mushy add the masala paste with some water and let it cook for 2 minutes. Finally add the chicken and mix evenly so that all the masalas coat on the chicken. I normally chop the cilantro and put it along with the chicken but you can even use it later to garnish the chicken.

Take the pressure cooker and put the chicken into it. Allow 3-4 whistles then turn off the stove. Once the curry cools down pour it back into the griddle and add the garam masala. You can make the curry more thicker at this stage if you want. Depends on what you are planning to serve with the chicken.  Chicken curry is ready to be served.
